Lime: fresh lime; alternative lime juice 
Cheese: queso fresco crumbling cheese; alternative cotija cheese
Cilantro: fresh cilantro
Seasoning powder: chili powder; alternative Tajín seasoning or smoked paprika 

Instructions Details

Sauté the corn


Add sautéed corn and mayonnaise mixture to the cups. 

  1. Add corn to the cup. 
  2. Add the mayonnaise mixture.
  3. Add corn.
  4. Add the mayonnaise mixture.
  5. Add crumbling cheese.
  6. Add cilantro.
  7. Add chili powder.
  8. Mix the corn salad in the cup.

Ingredients

  • 3 cups yellow corn
  • 2 tablespoons olive oil
  • 1 ½ cup mayonnaise
  • 1 lime
  • 1/3 cup crumbling cheese
  • ¼ cup cilantro
  • chili powder to taste

Instructions

Stovetop. Heat a skillet to low-medium heat setting. Once heated, add the olive oil. Then add the yellow corn. Sauté the corn for 10-15 minutes.

Mayonnaise mixture. In a bowl, add the mayonnaise and juice of half a lime. Mix the mayonnaise and lime juice.

Corn in a cup. Using small plastic clear cups, begin to layer the cup with the corn and mayonnaise mixture.

4th layer: add the corn to the bottom of the cup
3rd layer: add the mayonnaise mixture
2nd layer: add the corn
1st layer: add mayonnaise mixture

Toppings. Add the crumbling cheese and pieces of cilantro to each cup. Then sprinkle each cup with chili powder.

Garnish. Cut ½ lime into small wedges for garnish.
