Chicken & Brown Rice Greek Bowl

The Greek chicken rice bowl is typically made with chicken strips, rice, cucumber, cherry tomatoes, red onion, feta cheese, and tzatziki. The tzatziki sauce is a creamy cucumber yogurt dip or sauce. This Greek chicken rice bowl consists of brown rice, chicken strips, cucumber, cherry tomatoes, red onion, feta cheese, and a homemade tzatziki dip. 

Ingredients Details

Chicken: fresh chicken strips
Cooking oil: olive oil
Chicken seasoning
Paprika
Salt: plain salt
Pepper: ground black pepper
Rice: brown rice (Great Value Brown Rice Boil in Bag); alternative white rice
Olives: black, medium pitted olives; alternative sliced black olives 
Cucumber: English cucumber; alternative Persian or mini cucumbers
Onion: red onion
Tomatoes: grape tomatoes; alternative cherry tomatoes  
Cheese: crumbled feta cheese; alternative feta block
Tzatziki 
Cucumber: English cucumber; alternative Persian or mini cucumber
Yogurt: Greek plain yogurt; alternative plain yogurt
Dill: fresh dill
Lemon: fresh lemon; alternative lemon juice
Powder seasoning: garlic powder; alternative garlic salt or plain salt 

Instructions Details 

Season the chicken and cook. Boil the brown rice. Tzatziki: mixed the minced cucumber, yogurt, dill, lemon juice, and garlic powder. Cut the cucumber, grape tomatoes, black olives, and red onion.

Chicken
  • 1 cup chicken 
  • 2 tablespoon olive oil 
  • ½ teaspoon paprika
  • ½ teaspoon salt 
  • ½ teaspoon black pepper
Greek bowl ingredients
  • 3 bags brown rice
  • 1 cucumber
  • 1 cup grape tomatoes
  • ½ cup red onion
  • ¾ cup black olives  
  • ½ feta cheese container (3 oz)
Tzatziki 
  • 1 cucumber
  • 1 yogurt container
  • 2 tablespoons dill
  • 2 tablespoons lemon juice
  • garlic powder to taste

    Instructions

    Chicken. Prepare the chicken by adding the seasoning, paprika, salt, and pepper. Heat a skillet to medium heat. Add the olive oil, then the chicken. Cook the chicken until tender and well done. 

    Rice. Add water to a pot, but not to the top. Boil the water. Then add the brown rice bags. Boil until the rice is tender. Remove the bags from the pot and let them cool. 

    Tzatziki. Peel and mince the cucumber. Add the minced cucumber to a paper towel and squeeze out the cucumber liquid. Cut and mince the dill. In a bowl, add minced cucumber, yogurt, lemon juice, dill, and garlic powder. Mix the ingredients well. 

    Cut ingredients. Cut the cucumbers into cube pieces. Cut the black olives and grape tomatoes in half. Cut the red onion into half-moon shapes.

    Assemble the bowl. In a bowl, add the rice, chicken strips, black olives, red onion, cucumbers, and cherry tomatoes. Add the crumbled feta cheese. Then add Tzatziki, if desired.
