Potato Salad

Potato salad is a classic and well-known summer salad. It is an appetizing and excellent dish to serve at any social outdoor gathering or as a picnic side dish. 

Potato salad is a salad made with boiled, cubed potatoes, fresh vegetable ingredients, seasoning, and a creamy mayonnaise dressing. 

Ingredients Details

Eggs: white or brown eggs
Potatoes: russet potatoes; alternative Yukon gold potatoes
Onion: fresh green onion and red onion; alternative: white onion
Pickles: Kosher dill pickle spears; alternative: olives
Pickle juice: Kosher dill pickle juice or any brand of pickle juice
Mayonnaise: real mayonnaise or any other creamy mayonnaise.
Mustard: Great Value Dijon mustard or any brand of Dijon mustard; alternative: mustard
Seasoning
Seasoning powder: garlic powder; alternative garlic salt
Paprika: paprika spice; alternatives: cayenne pepper or chili powder 
Salt: plain salt
Pepper: ground black pepper

Instructions Details 

  1. Peel the potatoes.
  2. Cut the potatoes into cubes.
  3. Boil the potatoes.

  1. Boil the eggs. 
  2. Peel and cut the boiled eggs, green onion, red onion, and pickles. 
  3. Potato salad dressing: mayonnaise, Dijon mustard, pickle juice, paprika, and garlic powder.
  4. In a bowl, add cubed boiled potatoes, the cut boiled eggs, green onion, red onion, and pickles.






Ingredients 

  • 6 eggs (boiled)
  • 6 russet potatoes
  • 3 green onions
  • ½ red onion
  • 4 pickles
  • 2 tablespoons pickle juice
  • 2 cups mayonnaise
  • 1/3 cup Dijon mustard  
  • 1 teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • salt for taste

Instructions

Potatoes. Peel the potatoes, then cut the potatoes into cubes. Cook the potatoes until tender. Drain the potatoes.

Eggs. Boil the eggs. Salt lightly. Once boiled, let the eggs cool. (Add the eggs to a bowl of ice for faster cooling.) Peel the eggs. Then cut into pieces. 

Vegetable ingredients. Cut the green onion, red onion, and pickles into small pieces. 

Dressing. In a bowl, add the mayonnaise, Dijon mustard, pickle juice, paprika, and garlic powder. Combine all the ingredients until creamy. 

Combine the dressing and ingredients. In a large bowl, add the potatoes, eggs, green onion, red onion, pickles, ground pepper, and the dressing. Gently combine all the ingredients and dressing. Refrigerate the potato salad prior to serving.
