Elotes Asados {Grilled Corn on the Cob}

Elotes asados are grilled corn on the cob, also known as Mexican street corn. A popular snack item on the streets of Mexico and a traditional staple in Mexican cuisine. The street food vendors prep and serve the corn on a stick to their customers. Elote asado is corn that is grilled on the open grill then coated with the popular Mexican ingredients; mayonnaise, cojita cheese, lime and chili powder. A flavorful blend of ingredients for Mexican corn on the cob.

Grill the yellow corn on the cobs over low medium heat until it is slightly charred. Once the corn on the cob is cool, add the ingredients to coat the corn. For this recipe, I coated the corn with mayonnaise, cotija cheese and chili powder. Other people add butter, sour cream or Mexican crema to the corn. Once the corn on the cobs has been coated, squeeze lime over the corn for additional flavor. This is a delicious side dish to make for an outdoor holiday event and tastes absolutely amazing.






Ingredients

4 ears of corn

1 lime

1 cup of mayonnaise

1 ½ cup of cotija cheese

2 tablespoons of chili powder 

Cilantro for garnish 


Instructions

Grill corn over low-medium heat. Grill the corn until slightly charred. Let the corn cool.

Cut the limes into wedges. Squeeze ½ lime on each corn.

Brush a thick layer of mayonnaise on each corn, fully coating each one. 

Roll each corn on the cotija cheese, fully coating each one.

Sprinkle each corn with chili powder.

Squeeze the other ½ of lime into the corn. 

Garnish with cilantro and lime wedges on the dish.
