Simple yet tasty corn muffins from Jiffy mix. An American brand that has been around for many years. Many supermarkets carry Jiffy brands in the states. They offer a variety of Jiffy mixes from muffin, cake, biscuit, pancake and more options. The corn muffin mixes offer a great line of mixes to choose from. They offer honey, apple, blueberry and other options.
For this recipe I chose the basic corn muffin mix from Jiffy mix. You may opt to follow the Jiffy corn muffin instructions or add additional ingredients if desired. I added ground corn meal to the muffins. This step is optional as it is not included in the instructions. The added ground corn meal provides a bit more texture and flavor to the muffins. These corn muffins are simple to prepare and are an appetizing side dish.
Ingredients
1 {8.5oz} packet of Jiffy corn muffin mix
1 egg
1 tablespoon of butter
2 tablespoons of heavy cream
¼ cup of milk
¼ cup of vegetable oil
Ground yellow cornmeal
Instructions
Preheat the oven to 350 degrees.
In a mixing bowl, whisk the corn muffin mix, egg, milk, heavy cream and vegetable oil.
Grease a nonstick muffin pan with butter.
Sprinkle a small handful of the ground yellow cornmeal in the muffin pan.
Then pour the muffin mixture.
Bake for 13-15 minutes.
Let the muffins cool then serve.
