American brand that has been around for many years. I used the basic corn muffin
mix from Jiffy. They offer a variety of Jiffy mixes, including muffins, cakes,
biscuits, and pancakes. The corn muffin mixes offer a great line of
mixes to choose from. They offer honey, apple, blueberry and more.
You may opt to follow
the Jiffy Corn Muffin instructions or add additional ingredients if desired. I
followed the instructions, then added ground corn meal to the muffins. This step
is optional, as it is not included in the instructions. The added ground corn
meal provides a bit more texture and flavor to the muffins.

Egg: white egg

Ingredients
- 1 packet corn muffin mix (8.5 oz)
- 2 tablespoons heavy cream
Instructions
Preheat the oven to 350 degrees.
Muffin mixture. In a bowl, whisk the corn muffin mix,
egg, milk, heavy cream, and vegetable oil.
Muffin pan. Grease a nonstick muffin pan with
butter. Sprinkle the ground yellow cornmeal into the muffin pan. Then
pour in the muffin mixture.
Bake. Bake the corn muffins for 13-15 minutes.
