Carrot Flan

In Europe, flan can be found in countries such as Croatia and France. In Asia, it has also grown in popularity. Flan is made slightly differently depending on the country. 

Flan is also known as crème caramel pudding, and caramel custard is a creamy, soft custard topped with a sweet caramel sauce. It is generally made with condensed milk, eggs, and sweetener, then baked in water. For this carrot flan, opt for long, deep, orange-colored fresh carrots. Feel free to experiment with other types of carrots for this flan. 

Ingredients Details

Carrots: fresh imperator carrots; alternative canned carrots
Water: filtered and tap water
Sugar: granulated sugar
Eggs: white eggs
Milk: condensed milk and half and half
Extract: vanilla extract
Salt: plain salt

Instructions Details

Caramel (melted sugar): Add sugar to a skillet. Stir until the sugar dissolves. 

 



Ingredients

  • 3 carrots
  • 2 ¾ cups water
  • 1 cup granulated sugar
  • 2 eggs
  • 1 can condensed milk
  • ¼ cup half and half
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Instructions

Carrots. Add 2 cups of water to a pot, then cook the carrots on medium heat.

Caramel (melted sugar). On medium heat, add sugar to a skillet. Stir until the sugar dissolves and is melted. Add the melted sugar to the cake pan.

Filling. In a blender, add:

  • cooked carrots
  • eggs
  • condensed milk
  • half and half
  • vanilla extract
  • salt

Blend the ingredients until smooth, then add the filling to the cake pan.

Baking pan. In a baking pan, fill ¾ with water, then place the cake pan in the baking pan. Cover it with aluminum foil.

Bake. Bake for 1 hour, 15 minutes, or until golden brown.
