Prunes: dried prunes Cornstarch: Great value corn starch or any other brand Milk: whole milk Coconut milk: Goya coconut milk or any other brand Water: filter water Butter: salted or unsalted butter Sugar: granulated sugar; alternative; sweet, condensed milk Salt: plain salt
Ingredients
½ cup prunes
4 tablespoons cornstarch
1 ¼ cup milk
1 can coconut milk
1 ½ cups water
1 tablespoon butter
1 ½ cups sugar
½ teaspoon salt
Instructions
Prune sauce. In a medium-sized pan, add the prunes, 1 cup
of sugar and 1 cup of water. Cook the prunes on medium heat gradually for about
10-15 minutes until caramelized.
Cornstarch mixture. In a small bowl, add and dissolve the
cornstarch and ¼ cup of milk. On medium heat, add the cornstarch mixture to a
pan. Stir for 1-2 minutes. Add the following ingredients to the cornstarch
mixture:
1 cup of milk
coconut milk
butter
½ cup sugar
salt
Stir gently until creamy. Simmer for 10 minutes. Pour the
cornstarch pudding into the desired dish.
Refrigerate. Chill for 1 hour. Once chilled.
Garnish with prune sauce. Add the
cooked prune sauce to the cornstarch pudding.
