Codfish Empanadas

Cod fish empanadas are an appetizing and tasty pastry. Empanadas are a soft and slightly crispy snack or appetizer that can also be enjoyed as a main dish. Made with savory filling, these codfish empanadas are great to enjoy at home. 

Empanadas are a well-known dish in Latin America. They are popular street foods found throughout Central and South America but have also become very popular in the United States.

Empanadas are half-moon turnovers with beef, chicken, or fish filling that are frequently fried but can also be baked. These fish empanadas are filled with cod fish filling and then deep-fried. The empanada dough can be made from scratch, or you can buy the dough discs ready from the supermarket. For this recipe, to save time, I purchased empanada discos from the Latin market. 

Ingredients Details

Empanadas discos: Goya empanadas dough discos; alternative any brand of empanadas discos or homemade empanada pastry
Fish: salted cod fish; alternative fresh cod fish
Cilantro: fresh cilantro
Garlic: peeled garlic
Onion: white onion; alternative red or yellow onion
Cooking oil: olive oil and corn oil; alternative avocado oil and vegetable oil 


Ingredients

  • 10 empanada discos
  • ½ lb. cod fish
  • ¼ cup cilantro
  • 3 garlic cloves
  • ½ onion
  • 2 tablespoons olive oil
  • 2 cups corn oil

Instructions

Codfish and ingredients. Soak the codfish overnight. The following day, cut the codfish into pieces. Cut the cilantro, garlic, and onion into pieces.

Codfish filling. Heat olive oil in a skillet. Combine the codfish, cilantro, garlic, and onion in the skillet. Cook the codfish filling on medium heat for about 5 minutes. Then cook for an additional 10 minutes on low heat. 

Pastries and frying. Fill the pastries with the cooked codfish filling. Fold the pastry in half. Seal the pastry edge with a fork. In a skillet, heat the corn oil. Deep-fry the pastries until golden brown.
