Cucumber, Tomato & Yellow Bell Pepper Appetizer

This cucumber, yellow bell pepper and tomato appetizer is a elegant and stylish dish to serve for any event.  A healthy and light alternative to other appetizer dishes. This is a great appetizer with a combination of tasty veggies. 



This appetizer includes cucumber, grape tomatoes, tomato and yellow bell pepper. Opt for fresh vegetables for this dish. Home gardening and farmers market are great places for vegetables. I used fresh produce from my local supermarket. English cucumbers are a good option. Cherry tomato is another option if grape tomatoes are not available. Any type of bell pepper will work. Any type of bell pepper will work.

 For this appetizer you can either use a dip or a light salad dressing. A few options:

  • Lobster dip
  • Ranch dip
  • Veggie dill dip
  • Lighten up Light Caesar
  • Lite Italian dressing

Cut

Peel and slice the cucumber. Cut a thin slice of the yellow pepper. Then cut small pieces of the yellow pepper. For the tomato cut into four wedges without cutting deep down, creating a flower shape.

Dish

On a dish place the cucumbers around the dish. Also add the grape tomatoes between the cucumber slices. Add the wedges of tomato in the middle of the dish then add the thin slice of yellow pepper around the wedges of tomato. Then add the pieces of the yellow pepper around the dish. 


Ingredients

1 cucumber

1 tomato 

1 cup grape tomatoes

½ yellow bell pepper

 

Instructions

Peel and slice the cucumber.

Cut a thin slice of the yellow pepper. Then cut small pieces of the yellow bell pepper.

Cut the tomato into four wedges.

On dish place the cucumbers, grape tomatoes and yellow bell pepper around the dish.
