Coconut Polenta

This is a twist on the traditional recipe, Polenta from Italy.  An Italian dish made from cornmeal. The cornmeal is essentially ground yellow or white dried corn. There is also corn flour that has a powdery quality, while the cornmeal is a better option for its course texture. The yellow cornmeal is the favorite for making polenta. 

 The yellow cornmeal and the shredded coconut are the key ingredients to this recipe. Sweet, shredded coconut and coconut milk are additional main ingredients. By adding coconut, this gives the polenta a sweetness to the dish. This delectable coconut polenta makes a unique recipe. This is a creamy dessert that is soft and sweet with a mild taste of coconut. 






Ingredients

1 cup of yellow corn meal

2 tablespoons of sweet, shredded coconut 

5 cups of water

3 tablespoons of butter

½ cup of coconut milk

½ cup of granulated sugar

½ teaspoon of salt


Instructions

Combine and place all ingredients in a saucepan on the stovetop.

Cook on medium heat while stirring. 

Stir the polenta until it has molded into a thick & creamy texture.
