½ cup black beans
5 cups water
3 garlic cloves
1 onion
2 tablespoons tomato paste
1 teaspoon salt
1 teaspoon black pepper

Instructions
Beans. Soak the beans overnight. The following day,
cook the beans in water for about 2 hours. Remove the beans from the stovetop, then let the beans cool for at least an hour.
Cut and dice. Cut and dice the garlic and onion.
Blender. In a blender, add:
cooked beans
diced garlic
diced onion
tomato paste
salt and pepper
Blend until smooth.
Topping: Add cilantro and shredded cheese as toppings, if desired.
