Creamy Black Bean Soup

Homemade creamy black bean soup is an excellent dish to make in the cooler seasons. This soup is filled with a unique blend of great flavors. The black bean soup is a healthy and creamy soup to enjoy on a cool day.  



Black bean soup is a classic dish in Latin America and well known in Cuban cuisine. There are different versions of the soup in Latin America. There are black bean versions of soups from Puerto Rico, Mexico, Guatemala, and other Latin American and Caribbean countries. 

Creamy black bean soup is a blended soup of fresh beans and other ingredients. Toppings for this soup are optional. Cilantro and shredded cheese are great toppings to add to the soup. Rice is also optional. The combination of soup and rice is often consumed together in many Latin American countries. 


Ingredients Details

Beans: dry black beans; alternative canned black beans
Water: filtered water
Garlic: peeled garlic
Onion: white onion
Paste: tomato paste alternative canned diced tomatoes
Salt: plain salt
Pepper: ground black pepper
Toppings
Cilantro: fresh cilantro
Cheese: shredded yellow cheese; alternative shredded mix cheese 


Ingredients

  • ½ cup black beans
  • 5 cups water
  • 3 garlic cloves
  • 1 onion
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Garnish
  • cilantro
  • shredded cheese

Instructions

Beans. Soak the beans overnight. The following day, cook the beans in water for about 2 hours. Remove the beans from the stovetop, then let the beans cool for at least an hour.

Cut and dice. Cut and dice the garlic and onion. 

Blender. In a blender, add:
  • cooked beans
  • diced garlic
  • diced onion
  • tomato paste
  • salt and pepper
Blend until smooth.

Topping: Add cilantro and shredded cheese as toppings, if desired.
