Croquetes de Bacalhau (Codfish Croquettes)

Croquetes de Bacalhau are codfish croquettes that make a delicious appetizer. A simple international recipe to make at home. This is a tasty and soft on the inside yet slightly crispy-appetizing snack or side dish to enjoy. 

Codfish croquettes are a Portuguese recipe that is very popular in Brazil. Also known as bolinho de bacalhau, salt cod fritters, or salted cod croquettes. Commonly found in Brazilian bakeries, bars, family gatherings, party trays, festivals, restaurants, and street food. These croquettes are popular street foods that are common on street corner stalls serving warm and fresh codfish croquettes. 


Codfish croquettes are deep-fried, crispy croquettes made from salted cod and potatoes. It is a combination of shredded salted cod, eggs, potatoes, and other vegetable ingredients, then deep-fried in oil.

Ingredients Details

Cod fish: salted cod fish

Dairy

Egg: white or brown egg

Fruits & vegetables

Cilantro: fresh cilantro

Garlic: fresh garlic

Potatoes: baby potatoes; alternative: russet potato

Onion: white onion; alternative: red onion

Tomato: Roma tomatoes

Cooking Oil

Corn oil; alternative: vegetable oil

Seasoning

Pepper: ground black pepper


For 8 codfish croquettes 

Ingredients

  • ½ salted cod fish
  • 1 egg
  • ¼ cup cilantro
  • 3 cloves garlic
  • 6 baby potatoes
  • 1 tomato
  • 1 cup corn oil
  • ½ teaspoon black pepper

Instructions

Soak the codfish in water overnight. (This will desalt the codfish.)

Cut the following ingredients into small pieces:

  • Cod fish
  • Cilantro
  • Garlic
  • Onion
  • Potatoes

Then add the black pepper and cut ingredients to a bowl and combine.

Make croquette shapes from the bowl ingredients.

Deep-fry the croquettes in the corn oil until golden brown.
